Shizuoka, Shizuoka-shi is the capital city of Shizuoka Prefecture, Japan, and the prefecture’s second-largest city in both population and area. It has been populated since prehistoric times. In 1869, Shizuoka Domain was first created out of the older Sunpu Domain, and that name was retained when the city was incorporated in 1885. In 2003, Shizuoka absorbed neighboring Shimizu City (now Shimizu Ward) to create the new and expanded city of Shizuoka, briefly becoming the largest city by land area in Japan. Senju Brewery
Senju Sake Brewery started brewing sake in Iwata City in 1902, and is celebrating its 100th anniversary. Water is said to be the life of sake brewing, but in our case, the Ota River runs to the east and the Tenryu River runs to the west, and as the place name “Nakaizumi” indicates, it is a land that has been blessed with good quality water for a long time. , Echigo Mori has been brewing sake with great care. The famous water, Tenryu River underground water, which springs up from the well in the brewery, is cool all year round, and many people have complimented us on the deliciousness of the water. In addition, Ogaya-numa in the city is famous as the treasure trove of dragonflies in Japan, and many dragonflies including rare species on the verge of extinction inhabit. Part of the sales is returned as a cooperative fundraising. We believe that the origin of sake brewing is handmade ginjo sake, and we have used highly polished rice for more than 50 years from 1945, immediately after the end of the war, when there was a shortage of rice, to the present, and made all compromises. I have continued to make ginjo sake by eliminating. In recent years, we have a large number of engineers majoring in brewing, and we have inherited and developed the brewing technology cultivated in traditional ginjo sake brewing. Also, in Heisei, a new ginjo brewery was established, and long-term low-temperature brewing and storage are thoroughly carried out under strict temperature control. We have started working on old sake, which has become a quiet boom, from an early stage, and we are also focusing on selling high-quality products such as Daiginjo’s Daiginjo sake, which has been treasured for more than 15 years.
