    Ishikawa Sake Brewery – Best Sake Breweries in Japan

    Ishikawa Sake Brewery

    The history of Ishikawa Brewery started on September 1, 1863 (under the old calendar). The original location of the brewery was in Ogawa Village, on the opposite bank of the Tama River. In 1881, Ishikawa Brewery built a new kura (storehouse) in the present Kumagawa area and, in 1883, the whole business finished moving to this location. Ishikawa Brewery earlier used “Yae-zakura” (double-flowered cherry) as a brand name at first after the establishment of the business. This brand name showed the sister-company relationship with Morita Shuzo in Ogawa Village, who brewed “Yae-giku” (double-flowered chrysanthemum). In 1919, the brand was renamed “Yae-ume” (double-flowered plum), and in 1933, the present brand name, “Tamajiman,” came to be used. We pump up mineral water from underground on our site. When we brew our beer and our sake, we use this mineral water.

    Tokyo Sake Breweries

    Tokyo Prefecture is located at the head of Tokyo Bay, the prefecture forms part of the Kanto region on the central Pacific coast of Japan’s main island of Honshu. In 1603, when Tokyo was called Edo with the opening of the Tokugawa Shogunate, Edo developed rapidly. As the population increased, the demand for food and drink naturally increased, and the lives of ordinary people generally became more ornate. In 1790, the Shogunate gathered 11 leading local sake brewers to discuss the production of excellent sake and lent 14,700 stones (2,205 tons) of rice owned by the Shogunate to order the production of 30,000 barrels of fine white sake. The excellent sake that was born in this way was sold directly to the people of Edo on the Edo table with the signboard of “Gantojo Sake Sales Office”. It seems that the brewing industry in Edo has developed further since this time.
