Established in 1767, Imayo Tsukasa has a rich history that spans centuries, beginning as an inn and sake shop in Niigata, Japan. During the late Edo period and into the early Meiji era, Niigata rivaled even Edo (modern-day Tokyo) in terms of population and prosperity, establishing itself as the heartland of Japan. This bustling city was also recognized as one of the three geisha capitals of Japan, alongside Kyoto and Edo, a tradition that persists to this day.
However, it was during the middle of the Meiji era that Imayo Tsukasa transformed into a fully dedicated sake brewery. The decision was influenced by Niigata’s fertile soil and the pristine waters of the Agano River, making it an ideal location for crafting exceptional sake. The brewery found its home in Nuttari, a hub for Japanese fermented goods such as miso, sake, and soy sauce. The quality of Nuttari products soon gained recognition, attracting the attention of first-rate chefs from across Japan.
